Mango Ice Cream Recipe INSTRUCTIONS
Pour the mango juice into a plastic bowl and place in the freezer until the mango juice is frozen.

When frozen, take it out and using a spoon, (or a hammer if you really need to) and crush the mango ice into little pieces...and the mango ice cream recipe is ready ! Enjoy it !

Place this in a blender and blend until the mango ice is smooth. Scoop into a glass and serve with ice cream on top.

  • 1 jar (32 oz.) fresh canned mangos or 12 peaches
  • 2 c. sugar
  • 1 c. sour cream
  • 1 can condensed milk
  • 1 pt. cream
  • 1 qt. or more milk
INSTRUCTIONS

  • 6 eggs, well beaten
  • 1 tbsp. vanilla extract
  • 1 tsp. almond extract

Blend the mango pieces, lime juice and honey briefly in an electric blender or food processor. Soften the ice cream and quickly stir the mango mixture into it. Mango Ice Cream Recipe INGREDIENTS

* 3 large mangoes, about 3 pounds, peeled and seeded.
* 11/2 cups whole milk
* 1/3 cup heavy cream
* 3 tablespoons white sugar
* 1 tablespoon fresh lemon juice

Mango Ice Cream recipe Instructions

1. Cut enough of the mangoes into small cubes to measure 11/2 cups. Chill the cubes in the refrigerator.
2. Puree the remaining mangoes in a blender or food processor and transfer the puree to a bowl. You should have about 2 cups of puree.
3. Add the milk, cream, sugar, and lemon juice, and blend until the sugar dissolves.
4. Freeze the mixture using one of the methods described below.
5. When the ice cream if completely frozen "ripened" (no longer "slushy"), scoop the ice cream in pre-chilled serving dishes.
6. Serve each portion with some of the chilled mango cubes.

Hand-whisking Method

* Turn your freezer to the coldest possible setting.
* Choose a nonreactive metal bowl that will fit in the freezer. Do not use glassware. The ice cream will not freeze.
* Transfer the ice cream mixture into the metal bowl. Place dessert mixture in the freezer.
* Whisk the mixture when a ring of crystals form around the edges of the bowl. This will break up the ice crystals and aerate the mixture. Return the mixture in the freezer.
* Repeat the process until the mixture is frozen throughout and achieves the consistency of ice cream.

Food Processor Method

* Freeze the mixture in a nonreactive metal bowl.
* When the dessert has solidified, break it into chunks and put them in a food processor.
* Process the frozen chunks until the dessert has a smooth consistency, but do not overprocess or the dessert will melt.
* Transfer the mixture into the metal bowl and return to the freezer to "ripen" for another 15 minutes or until it is firm enough to be served.

Mango Ice Cream Churning Method

For this method, you can use an old fashioned ice cream maker or an electric model. If you are using the latter model, make sure you follow the manufacturer's instructions carefully.

Mango Ice Cream Recipe Ingredients:

* 2 cups peeled and cubed mango
* 1/3 plus 1/2 cup granulated sugar, plus extra to taste if needed
* 2 - 2 1/2 tablespoons fresh lime juice (I used 2 1/2)
* 1 3/4 cups half and half*
* 1 1/4 cups coconut milk
* 2 - 3 tablespoons of toasted coconut as garnish, optional
* Handful of mint sprigs as garnish, optional

Mango Ice Cream Recipe INSTRUCTIONS
1. In a large bowl, combine the cubed mango with 1/3 cup of sugar. Cover and marinate overnight in the refrigerator.
2. The next day, in a saucepan over medium-low to low heat, simmer the mango pieces with the sugar syrup. Cook for 5 minutes, stirring occasionally, then remove and cool.
3. Puree the mango and sugar syrup mixture in a blender or food processor. Add the lime juice and process again. Cover and chill for an hour.
4. In a large bowl, combine the half and half and coconut milk with the remaining 1/2 cup sugar, stirring to dissolve the sugar. Stir in the pureed mango, not beating but stirring gently to mix in. If you like, do a taste test and add more sugar if desired.

5. Chill in the freezer, stirring occasionally until hardened, or prepare in an ice cream maker according to manufacturer's directions. If after preparing in the ice cream maker, you find you want a firmer consistency, pack the mango ice cream in a airtight plastic container and place in the freezer for about 2 hours. Remove from freezer 15 minutes before serving.

Garnish with the toasted coconut and mint sprigs if desired. The mango ice cream recipe is ready to serve...enjoy the ice cream ! Nice !
